These days we are trying to eat healthier. The key word in that last sentence is "trying". Our attempts at better eating habits is a work in progress. And yes, there are many times we fall off the wagon and succumb to the pleasures of junk food! It's not easy but I find that it helps us if we follow some sort of a schedule.
Basically our healthy eating manifesto is a Monday to Friday program and it includes:
1.) Not eating beef and pork. We eat mostly fish, chicken, turkey, beans, veggies and fruits.
2.) Not eating anything white (bread, pasta, rice, sugar or anything with processed flour). We've switched to brown rice, whole wheat pasta, multi-grain bread and Stevia (natural sugar product).
3.) Reducing our sugar and caffeine intake (that means I have stopped taking coffee and soda while Jojo has stopped drinking high-sugar juices).
Of course, this is only from Monday to Friday. It's still a free-for-all on weekends. That way we don't feel deprived and we always have days to look forward to. As I said, we can't give everything up otherwise what would be the point of LIFE!?
It's not as hard as I thought. Again, it helps if you have a schedule and if you and your partner do it together. This is a sample of our dinners last week.
NOTE: Pictures are done by an amateur food-styler (me) and an amateur photographer (Jojo). But everything was home-cooked! (me and Atsi - who was here all of last week).
MONDAY: Grilled chicken breast on a toasted foccacia bun with sliced tomatoes and a cup of white bean soup.
TUESDAY: (Fish tacos) Breaded and baked mahi-mahi fillets, with a corn and tomato relish, on a wheat tortilla with lite sour cream and an onion dip dressing.
WEDNESDAY: Ground turkey spaghetti (whole wheat pasta) and a mixed lettuce and tomato salad with an apple cider vinaigrette.

THURSDAY: Grilled salmon, steamed asparagus with mustard dressing, and garlic mashed potatoes.

FRIDAY: Breaded and baked chicken cutlets, stir-fried broccoli with garlic, and brown rice (not in the picture).
We've been doing this for the last 3 weeks. So far, so good. I'm finding new and creative ways to cook more fish and veggies. It's been great. I feel better about what I'm eating and I think Jojo's getting used to it too.

Thanks mom. I am going to have to call you just a bit more often when I run out of things to cook! By the way, are the pictures and the text coming out aligned (meaning are the right captions beside the right pictures)? I used a MAC to publish this post and it came out ok but when Jojo opened this post up at his computer the pictures and text didn't match. How does it look on your end?
