Lettuce Have a Healthy Dinner

One of my favorite things to eat during a Chinese lauriat is pao-chai (lettuce cups you fill with stir-fried ground duck and top off with hoisin sauce). My mom also prepares pao-chai at home - sometimes using ground pork or even ground chicken. Yesterday, I was craving this dish and decided to make a healthier and super easy version for dinner.

Here is my three-step, healthy pao-chai:
(1) Saute 1/2 cup diced onion, 1/2 cup chopped green onion, 1 cup finely-diced carrots, and 1 tsp. minced garlic in 1 tsp. of corn oil.
(2) Add 1 pound ground turkey and brown the meat.
(3) Add 1 Tbsp. black bean sauce, 1 Tbsp. hoisin sauce, 1/2 tsp. sate sauce, and 1/2 tsp. chili garlic sauce. Cook for another 5 minutes.

Prepare iceberg lettuce cups, top with the turkey filling, and add shredded carrots for that extra crunch (instead of deep fried noodles). Top with a sauce made with black vinegar, chopped garlic and lite sesame oil. Chili garlic on top of that is optional.

Ready to eat ... and so yummy! I ate 4 of these for dinner =)

What a great way to enjoy a meal and yet stay within your diet. Keep it up. Can't wait to try your version of pao chai myself
